| SPICY OKRA AND AUBERGINE |
| INGREDIENTS: |

2 tablespoon WORLDFOODS Thai Red Curry Paste; 150g okra, sliced diagonally; 100g aubergine, cut into 2 inches long strips; 1 medium onion, sliced; 1 tablespoon tomato paste/puree; 100ml water; 1 tablespoon oil |
INSTRUCTIONS:
Medium heat |

Heat a large frying pan and pan-fry aubergine for 2-3 minutes until cooked. Remove onto a plate. |

Heat oil and brown onions. Add okra and stir-fry for 2 minutes. |
| 3. |
Add curry paste, tomato paste and water and cook till okra is tender. |
| 4. |
Just before serving, throw in aubergine and stir till heated through. |
| 5. |
Serve with rice or as a side dish. |
